    Strawberry Blondies (With Strawberry Glaze)

    These strawberry blondies are soft, chewy dessert bars packed with real strawberry flavor from freeze-dried strawberries and topped with a sweet strawberry glaze. These blondies get their vibrant color and intense berry taste naturally, creating a perfectly balanced dessert that’s both rich and fresh.     WHY THIS RECIPE WORKS

    • Strawberry flavor: This blondie is full of strawberry flavor from the freeze-dried strawberries.
    • Chewy and fudgy texture: These blondies are made using the same method as a brownie, but instead of dark chocolate they are made with white chocolate and are therefore just as fudgy as normal brownies.
    • Easy dessert: It is super easy to mix together and is always a crowd pleaser!

    INGREDIENT NOTES

    • Butter: The butter is melted and mixed together with the white chocolate. 
    • Eggs: Take them out of the fridge about 1 hours before baking.
    • White chocolate: Instead of dark chocolate these blondies are made using white chocolate and are therefore just as fudgy as normal brownies.
    • Freeze-dried strawberries: To give max amount of strawberry flavor and give it a natural pink color they have lots of freeze dried strawberry powder.

    STEP BY STEP INSTRUCTIONS

    Here is how to make and bake these Strawberry Blondies. This recipe need an electric mixer, one large bowls, and a spatula.

    Before starting preheat the oven to 160ºC/ 325ºF conventional oven. Prepare a 20x20 cm square pan with parchment paper.

    STEP 1: Melt the butter and add it to a bowl. Add the chocolate chips and stir it together until melted. Then add the granulated sugar, and whisk it together with an electric mixer until combined.

    STEP 2: Add the eggs and mix them on high speed for 1-2 minutes, so it becomes light and fluffy. Then add the vanilla extract and whisk it until combined.

    STEP 3: Add the dry ingredients to the batter and gently whisk it together until combined. Pour the blondie batter into the prepared pan, smooth it out with the spatula.

    STEP 4: Bake it for 32-35 minutes. Once baked, let it cool down completely on a cooling rack. Once completely cooled down, remove it from the baking pan and place it on a serving dish and make the strawberry glaze.

    STEP 5: To a small bowl, add all of the ingredients and mix it together until smooth. Pour the strawberry glaze over the blondie and spread it out. Optionally decorate with slices of freeze-dried strawberries. Let it set at room temperature. You can also place it in the fridge to set faster. Once the glaze has set and firmed up, it’s ready to be served.

    EXPERT BAKING TIPS

    • Use a kitchen scale: My default setting for my recipes is grams. It is the most precise way of measuring out your ingredients, I therefore highly recommend using a kitchen scale.
    • Don't over mix your batter: I always use a spatula after everything has mixed together, to give it one final gentle fold together. This makes sure everything in the bottom of the mixing bowl has been mixed into the batter.
    • Light vs. dark baking pans: For the best result, use an aluminum baking pan, greased with butter and lined with baking paper in the bottom. Aluminum pans are light in color and therefore attract less heat. That means it bakes more gently which results in a softer cake. If you use a black baking pan it'll attract a lot more heat. That will then give a darker crust, which can result in a dryer cake.

    FAQ

    How do I know when it's done?

    You'll know the blondie is done, when it has just set. When taken out of the oven, insert a butter knife or toothpick and if it has wet batter on it, give it 5 more minutes but if it has moist crumbs on the knife it's done. It should bake for no more than 35 minutes.

    Can it be made a day ahead?

    Yes, absolutely. This blondies get super rich and fudgy by staying in the fridge overnight.

    Should I use a glass pan or a metal pan?

    I always recommend a metal pan. They conduct the heat correctly whereas glass pans doesn't cook the baked goods as evenly.

    HOW TO STORE

    Here are two option on how to store the fudgy strawberry blondies:

    • Room temperature: To keep these blondie fudgy I recommend storing it at room temperature in an airtight container or covered by plastic wrap. To keep the edges from drying out, I suggest waiting to cut them until you're ready to serve them. They will stay soft for 2-3 days when stored properly.
    • Fridge: I personally love a cold blondie. It tightens up the texture of the blondie and makes them extra fudgy. They are therefore really good to make a day ahead of serving. Just store them in the refrigerator overnight uncut covered by plastic wrap.

    • 125 g white chocolate chips
    • 150 g granulated sugar

    • 160 g all-purpose flour
    • ¼ teaspoon salt
    • 3 tablespoon freeze-dried strawberries powder about 25 g of freeze-dried strawberries before blended

    • 115 g powdered sugar
    • 2 teaspoon freeze-dried strawberries powder
    • 1 ½ tablespoon water

    • Then add the vanilla extract and mix until combined.
      2 teaspoon vanilla extract
    • Add the dry ingredients to the batter and gently mix it together until combined.
      160 g all-purpose flour, ¼ teaspoon salt, 3 tablespoon freeze-dried strawberries powder
    • Pour the blondie batter into the prepared pan, smooth it out with the spatula.
    • Bake it for 32-35 minutes. Once baked, let it cool down completely on a cooling rack.
