Preheat the oven to 160ºC /325ºF conventional oven. Prep a loaf pan with parchment paper.
Melt the butter in the microwave in a microwave-safe bowl or in a small saucepan and add the chocolate chips to the butter and stir it together.
60 g butter, 50 g dark chocolate chips
Sift together the flour, cocoa powder, cornstarch and salt.
50 g all-purpose flour, 30 g cocoa powder, 2 teaspoon cornstarch, ¼ teaspoon salt
In a bowl, with an electric hand mixer, whisk together the eggs and granulated sugar until light and fluffy for 4 minutes. Add the melted butter and chocolate, oil and vanilla extract into the batter and mix until combined.
175 g granulated sugar, 2 large eggs, 45 g oil, 1 teaspoon vanilla extract
Add flour mixture to the batter and on the lowest setting gently mix it together until combined. Scrape down the sides of the bowl with a spatula and add additional chocolate chips, saving a few for the top. Gently fold them in until combined.
