These birthday blondie bars so soft and super easy to make! I have always loved a good blondie, and when it’s super soft you really can’t go wrong. The addition of these birthday sprinkles, just takes this blondie to another level! A fun and delicious festive cake.

This birthday blondie really takes no time to make. It's so festive and cute and perfect for a birthday or any other celebration. If you’re not wanting to add any sprinkles it’s completely optional. It has a delicious soft blondie and topped with a smooth chocolate buttercream.

STEP BY STEP INSTRUCTIONS
FUNFETTI BLONDIE
Preheat the oven at 175°C conventional oven.
Prep a 20x20 square pan with parchment paper.
Melt the butter, and pour the melted butter into a mixing bowl. Add the brown sugar, granulated sugar and vanilla extract. Use a hand whisk and mix until combined, for about 30-60 seconds.
Add the eggs one at a time, and mix until incorporated. Once incorporated, continue giving them a good whisk for 1-2 minutes. You will also see, when you whisked enough that it will start to come together in a smooth batter.
In a separate bowl mix together the flour, funfetti sprinkles and salt.
Add it to the wet batter and gently mix the batter together until just combined.
Pour the batter into your baking pan and even it out with the spatula.
Bake for about 20-22 min. Once baked place it on a cooling rack and let it cool down.

CHOCOLATE BUTTERCREAM
Once the blondie has cooled down completely, make the buttercream.
In your stand mixer, using the paddle attachment, start by creaming the butter on low to medium speed for 2 min. Sift the powdered sugar and cocoa powder together. Scraping down the sides of the bowl and add alternately the powdered sugar/cocoa powder and vanilla extract, in 3 parts. Once all of it has been added, scrape down the sides of the bowl, and give the buttercream a final mix at low/medium for 2 min.
Then with a rubber spatula or a wooded spoon give the buttercream a good stir to beat out any air bubbles.
Add the buttercream on top of the blondie and spread it out. Finish with sprinkling with extra sprinkles on top.
STORAGE
Store these birthday blondie bars in an airtight container, at room temperature. It's best enjoyed within a few days.
