INGREDIENT NOTES
These are some of the key ingredients for this recipe. For a full list of ingredients, check out the recipe card below.
- Semi-sweet chocolate: Semi-sweet chocolate is used for the whipped chocolate ganache. Preferably at dark chocolate that is between 60-70%.
- Unsweetened Cocoa powder: I use high quality dutch process cocoa powder for the best flavor, my favorite is from Valrhona.
- Butter: The butter is used cookie crust.
STEP BY STEP INSTRUCTIONS
Here is how to make and bake this Caramel Chocolate Pie.
The full recipe is down below in the recipe card.
STEP 1: Start by making the chocolate ganache. Melt the semi-sweet dark chocolate. Heat up some heavy cream until it starts to steam. Pour the heavy cream into the melted chocolate until incorporated.
STEP 2: Then add some cold heavy cream and stir it together. Place it in the refrigerator for 6 hours or overnight.
Before starting preheat the oven to 180ºC/ 355ºF conventional oven.
STEP 3: Move on to making the cookie crust. Blend the cookies, cocoa powder and granulated sugar. Add melted butter to the food processor and blend it together with the blended cookies.
STEP 4: Add the cookie crumbs to the pie pan and press it down so it’s well packed together and flattened out. Bake it and let it cool down.
STEP 5: Once the crust is cool, make the caramel. In a saucepan, add the granulated sugar, glucose syrup and water. Once you can see it starts slightly browning, give the pan a swirl once in a while so it all melts evenly.

STEP 6: Once golden brown, take it of the heat and stir in the butter. Place it back on the heat and add the heavy cream, a bit at a time. Let it bubble until it reaches 233-235ºF/112-113ºC. Turn off the heat and add the salt and vanilla bean paste and stir it in. Pour it into the crust and let it chill in the refrigerator for 5 hours to set or overnight.
STEP 7: Whip the ganache until stiff peaks and add it on top of the pie. Let it set in the fridge for 1 hour and it's ready to be enjoyed.
EXPERT BAKING TIPS
- Use a kitchen scale: My default setting for my recipes is grams. It is the most precise way of measuring out your ingredients, I therefore highly recommend using a kitchen scale.
- Don't over mix your batter: I always use a spatula after everything has mixed together, to give it one final gentle fold together. This makes sure everything in the bottom of the mixing bowl has been mixed into the batter.
- Light vs. dark baking pans: For the best result, use an aluminum baking pan, greased with butter and lined with baking paper in the bottom. Aluminum pans are light in color and therefore attract less heat. That means it bakes more gently which results in a softer cake. If you use a black baking pan it'll attract a lot more heat. That will then give a darker crust, which can result in a dryer cake.

What Is Whipped Chocolate Ganache?
Whipped chocolate ganache is a light, fluffy chocolate cream made by whipped a mixture of melted chocolate and heavy cream once it has cooled and thickened. Unlike traditional chocolate ganache, which is smooth and dense, whipped ganache has a light, airier texture. It’s the perfect topping for this caramel chocolate pie because it balances the rich, chewy caramel filling without making the dessert feel too heavy.
How to Get Clean Slices of Caramel Chocolate Pie?
For clean, beautiful slices, make sure your caramel chocolate is completely chilled and the caramel filling has fully set before cutting. Use a large, sharp knife dipped in hot water, then wipe it dry before slicing. Clean the knife between each cut to prevent the caramel and whipped chocolate ganache rom smearing into the layers.
FAQ
Yes! This caramel chocolate pie is a perfect make-ahead dessert for Thanksgiving or special occasions. You can prepare it 1–2 days in advance and store it covered in the refrigerator until ready to serve. For the best texture, let it sit at room temperature for 10–15 minutes before serving.
Caramel filling can become too hard if it's cooked for too long, causing too much moisture to evaporate. For a perfectly chewy caramel filling, use a candy thermometer and follow the recommended temperature in the recipe. Remember that caramel firms up considerably as it cools.
Whipped chocolate ganache may not become fluffy if it's too warm, hasn't chilled long enough, or has an incorrect chocolate-to-cream ratio. Make sure the ganache is completely cooled before whipping it. Avoid overwhipping, as this can cause the ganache to become grainy or split instead of light and fluffy.
HOW TO STORE
Store the caramel chocolate pie in the refrigerator. It's best enjoyed within a 2-3 days.
